In Peru, Aji means chili pepper and usually refers to Aji Amarillo – the yellow Peruvian pepper. If you’ve been following my page for a while, you’ll know that this chili paste frequently makes an appearance in my recipes. I highly encourage you to pick up a jar, or use any chili paste that you like! This marinade is salty, savory and a little spicy thanks to the aji amarillo. It’s great with fish, chicken, pork, vegetables or even mixed with a bit of kewpie mayo for a savory aioli.
